Ingredients:

8 ounces (225g) red lentil penne pasta
2 cups marinara sauce
1 cup vegan cheese shreds (such as mozzarella or cheddar)
1/4 cup nutritional yeast (optional, for added cheesy flavor)
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 teaspoon dried oregano
1/2 teaspoon dried basil
1/2 teaspoon dried thyme
Salt and pepper to taste
Fresh basil leaves, chopped (for garnish)

Instructions:

Preheat the oven to 375°F (190°C) and lightly grease a baking dish with olive oil.
Cook the red lentil penne pasta according to the package instructions until al dente. Drain and set aside.

In a large pan, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until softened and fragrant.

Stir in the dried oregano, dried basil, and dried thyme. Cook for another minute to release the flavors.

Add the marinara sauce to the pan and stir well to combine with the onion and garlic mixture. Simmer for 5 minutes.

In a separate bowl, mix the cooked red lentil penne pasta with the marinara sauce until well coated.
