My personal favourite is the banh mi complete with marinated tofu, pickled vegetables and a hefty serving of sriracha. The fragrant pho is a close second though!
The full menu consists of summer rolls, mushroom pho, goi xoai mango salad and bun cha noodle salad for lunch or dinner. For breakfast we’ll be having chao/congee or a delicious fried tofu banh mi sandwich.
Here are all the ingredients you’ll need, in order of appearance:
– bunch spring onions
– Sriracha
– rice paper
– mushroom
– peanuts, can use salted
– sesame seeds
– 1/2 red cabbage
– rice vermicelli noodles
– French baguette
– 2 avocados
– 2 mangoes
– 1 bunch radishes
– mung bean sprouts, or any
– 1 cucumber
– vegetable stock cubes
– vegan mayonnaise
– peanut butter
– 1 kg tofu
– rice noodles
– basmati rice
– birds eye chillies
– whole cloves
– fresh ginger
– garlic onion
– lemon
– lime
– cinnamon sticks
– 5 carrots
– soy sauce
– white wine vinegar
– sushi vinegar or rice vinegar
– olive oil
– fresh basil
– fresh mint
You can easily modify many of these recipes and omit whatever ingredients you don’t like. Hate mushrooms? Don’t add them to the pho, or swap them out for tofu. Allergic to peanuts? Do away with them!
