2 green chillies
¼ cup cashew cheese
4 whole wheat vegan bread slices
1 medium capsicum
1 medium onion, peeled
4-5 fresh coriander sprigs
Rock salt to taste
Crushed black peppercorns to taste
Vegan tomato ketchup to serve


1. Finely chop capsicum, onion, green chillies and coriander and transfer them into a large bowl.
2. Add cashew cheese, rock salt, crushed black peppercorns and mix well.
3. Preheat the oven at 180˚C.
4. Take the bread slices on a baking tray and apply the prepared mixture on top of each and spread it evenly.
5. Place the baking tray in the preheated oven and toast for 15-20 minutes or till the cheese turns golden brown.
6. Slice and serve hot with vegan tomato ketchup.
